Cabernet Sauvignon

The variety that brings finesse to our wines.

 

Vegetative and physiological characteristics:

Type: Black variety, originally from France (Bordeaux).


The Vine: Vigorous plant well adapted to temperate climates and not very humid. Mature extended leaf, but low side lobes extended forward. Some marked outline, medium size, orbicular form, bright green, llustrated with five  highlighted lobes and the lateral sinus broad base and overlapping edges (perforated).


Grapes: Small to medium bunch, loose, conical medium and some with  cylindrical edge. Small berry, thick-skinned, so spheroid and with soft pulp. Not very compact. It has an average weight of 150grams, with a very intense colour.

Variety of late budding and middle-late ripening. It is the last Black variety harvested in Sarral.


Cultural characteristics:



Sensitive to mildew and less to powdery mildew.
Adapts well to all types of soils but it is still sensitive to the lack of potassium and magnesium.


Enological characteristics:



The wines:  Wines with dense tannins, deep colour with complex fruit aromas, elegant and good attitude to aging. Characteristic for their vegetable, flower aromas and fruit as well.
